About Australian Mt Top Estate - Bin 478 - Xtra Fancy (2012 crop)

The new crop 2012 Mt Top lots look exceptionial, as good as we have produced in the past 5 years.

Additionally we have been trialing soaking of the parchment after pulping and washing, we have trialed 24-36 and even a 72 hour soak time. We are also trialing long drying times in the mechanical driers up to 72hours at maximum of 32degrees Celsius. Lastly we have trialed use of natural acids in the soak tanks.

It is all leading to a very clean cup, sparkling acidity however with all the sweetness and full body chocolate notes that our Mt Top Estate lots are renowned for. It is very early season, however early cup results are outstanding and we can’t wait for 2012 release in January!
