About Ethiopia Sidamo-3 (OCR)
Another ECX lot, but again our spies have divulged some information for us; the coffee was sourced for us by Trabocaa and likely to come from the Guji sub-region of Sidamo; the Guji Oromo are an ethnic Oromo group living a partly nomadic agrarian lifestyle in the fertile and natural resource-rich lands around the Shakiso-Adola evergreen forests.
This is an unwashed coffee, where the coffee cherries are allowed to dry on the bean. This is done by placing the 100 % ripe, RED, cherries dried controlled on raised, woven african beds allowing for air circulation preventing fermentation or spoiling of the bean. I
This type of processing allows the fruity mucilage on the cherry to transfer into the bean and creates a sweeter, more fruity cup; with typical Ethiopian Aromatics in coffees.
This is also an Operation Cherry Red (OCR) coffee, where farmers are paid premiums to produce exceptional coffees by sorting the best ripe red cherries and taking diligent care during drying. These premiums are paid back into the farmer groups through investing into drying beds, cooperative tools and some pulping equipment.

General Comments: A very fruit driven yet balanced cup this coffee has a sweet tropical fruit and spicey aroma. In the cup it is fruity sweet, with a lively and bright orange/mandarin-like acidity. A juicy mouthfeel and aftertaste brings flavours dominated by blueberries, strawberries and some stonefruits as it cools.
