About Australian Mt Top Estate - Bin 35 - Xtra Fancy (2012 crop)

The new crop 2012 Mt Top lots look exception, as good as we have produced in the past 5 years.

Typically our Bin 35 is sourced from the late harvest and naturally ripened fruit and processed through our innovative processing systems. As the 2012 fruit quality is good and early natural batches have also been excellent, we have high expectations for this years crop.

Typically the Bin 35 is fruity sweet, full bodied, rich style of coffee which works particularly well as espresso; the flavours are balanced with a liquer-like sweetness, dark candied fruit acidity, and a rich round body.

It’s processed using a “Double Pass” system we developed in Australia, where the fruit is allowed to over-ripen on the trees to raisin like, then soaked, pulped and washed. This produces the complex dark style of sweetness with a more clean cup from the washing process.
