About Indonesia Flores Tangkul Asnikom Washed

This small lot was produced late harvest in the village of Tangkul, East Manggarai by 18 farmers. Ripe cherry is hand-pulped, floated, fermented for 36-48 hours, washed and dried in the sun. Though processing is done individually by family, these neighbors maintain the same standards for processing. Tangkul is among the highest elevation areas for coffee production in Flores, ranging from 1450-1600 masl, with a quality mix of cultivars including S-795, yellow caturra, and typica.

MTC has chosen to bypass the network of commercial traders to collaborate with and purchase directly from farmer cooperatives. As a result of this strategy, a detailed mapping of micro-regions has emerged, with complete traceability to individual family plots, known as ‘lingko’. This same heritage land distribution system resulted in the famous ‘spider web’ rice terraces of Manggarai. An intensive quality program been initiated, with the training of local inspectors, increasingly detailed processing standards, and lot batching protocol. Coffee is transported from Ngada and Manggarai to our warehouse in Malang, East Java, for final processing and export via the port of Surabaya.

About Flores

Flores is one of the smaller islands in the Indonesian archipelago, only 580 kms across, and is located 320 kilometers to the east of Bali. Most coffee on the island is produced at elevations of between 1200 to 1800 meters above sea level, and is generally situated on the rugged slopes of the island’s many active and inactive volcanoes. Volcanic soil helps considerably in high quality coffee production, given that the ash creates particularly fertile soils.

Production on the island is predominately shade-grown, and historically pulp-natural processing has been the norm. However, due to large scale growth in the industry, typical pulp-natural processing methods have been increasingly moving to fully washed and wet-hull methods on Flores, as cooperatively run mills are increasingly shifting to these processes.
